Hubs and I are hoping to go snowmobiling later today, but it all depends on whether we can get the belt changed in my machine. I’m crossing my fingers.

Beef: it’s what’s for dinner

Pot roast to be exact was for dinner last night, and it turned out wonderfully! And it was really simple to make, so I thought I’d share the recipe.

2 teaspoons olive oil
3 pounds boneless chuck roast
1 onion, chopped
4 medium unpeeled potatoes cut into pieces
baby carrots – as many as you want
2 cloves garlic, minced
